Taco bowls with a thousand variations

This taco bowl recipe can be tweaked in a number of ways to satisfy even the pickiest of eaters. Go from classic to real jazzed up, just go by your mood on that day!

Ingredients
  

  • 2 cups white rice
  • 1 package turkey burger
  • 1/2 yellow onion diced
  • 1 can dark red kidney beans drained and rinsed
  • 3 limes
  • 1 avocado
  • 8 oz cherry tomatoes cut in quarters
  • cheese of choice/sour cream
  • green salsa

Instructions
 

  • Begin cooking rice per package directions
  • Heat 1 TBSP olive oil in a small pan over medium-high heat. When glistening, place diced onion in the pan. Stir frequently and cook until edges are golden brown and the centers are translucent . 5-8 minutes.
  • When onions are almost done cooking (this doesn't have to be an exact science, heat the rest of the oil in a large pan. Once the oil is glistening, place the turkey burger in the pan. Break into small pieces with a spatula.
  • The turkey burger should have no pink at all, and cooked to an internal temperature 165F.
  • When turkey burger is cooked through, decrease heat to simmer. Add your packet of taco seasoning and sautéed onions. Stir to combine. Depending on the fat content of the meat, you may have to add some water. Add a few tablespoons at a time.
  • Make your bowls! Add desired ingredients to your own personal bowl and enjoy!

Notes

These taco bowls are the perfect solution for when not everyone likes the same things! Even the pickiest of eaters can be satisfied with this meal. Besides what is listed above, you can always add on some sautéed peppers, sour cream, jalapeños, cilantro, or even corn.
Personally, I like to change it up based on my mood. Sometimes I’m really craving something spicy and these do the trick with some salsa on the side. There was this really good jalapeño cream at Whole Foods but they don’t sell it anymore! If you see something like that, try it! I bet it would be delicious with this meal.
