Baked Sriracha Lime Salmon

Minimal ingredient dinner that really does not take too long to make and fills up the hungriest of humans. Trust me, I know 🙂

Ingredients
  

  • 1 lb Atlantic salmon
  • 2-3 limes
  • 2 1/2 TBSP sriracha (whichever brand is fine – I'll link my fave in the notes section).
  • 1 cup brown rice
  • 1 head broccoli cut into florets
  • 1 small bag mini potatoes
  • 1 TBSP Extra virgin olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 350F
  • Wash and dry the potatoes. Toss with olive oil, salt, and pepper. Place on a lined baking dish and put in oven once preheated. Set a timer for 45 minutes and flip potatoes halfway thru that cooking time.
  • Begin cooking rice per package directions.
  • Combine sriracha and lime juice, mixing together with a fork. Taste to make sure it's not too spicy for your liking! You can always add more lime juice.
  • with about 30 minutes left of cooking time on the potatoes, begin brushing the salmon with the lime and sriracha mixture. Once mixture is on the salmon, finish it off with some sea salt and fresh cracked black pepper.
  • Place the salmon in the oven with 25-30 minutes left on the potatoes. You'll want the internal temperature of the salmon to be 145F. Depending on the thickness of your fish, it could take 25 minutes exactly or more like 28.
  • Begin steaming your broccoli – this should only take a few minutes. I like to steam my veggies the same time as my rice (this usually takes about 15 minutes total if you want to combine them)
  • Once everything is done cooking, let the salmon rest for about 5 minutes. Remove the skin from the fish and place on a bed of brown rice. Serve with the potatoes and steamed broccoli. Feel free to add a light squeeze of lime juice over the top and enjoy!

Notes

I created this recipe after being dissatisfied with the pre-marinated fish at the store. It was always lacking….something. That being said, I think I may have cracked the code because this dish was a crowd pleaser, let me tell you! My husband (arguably the pickiest eater ever), wanted more the next night so I’ll call that a win! 
 
Ok, so if you have read any of my recipes before, you know I adore my Nutribullet any grain cooker! That is what I used for this dish (surprise, surprise). What I find super convenient is that I can steam veggies at the SAME TIME as the rice cooks. What is this sorcery!? To be honest, I never really knew how to steam vegetables….thanks mom (she’s actually the best!). This little gadget makes it so easy and I love that I can add something healthy into my meals without having to spend a bunch of time learning something new. 
Also, my favorite sriracha by far is the SkyValley brand…..yes I buy it on Amazon. I’m that addicted.
